What's a good chandelier size for a standard Italian bedroom?

For a 14-18 sqm bedroom with 2.7 m ceilings, 55-75 cm diameter is the sweet spot. Scale up only if the bed is king size and the room is over 20 sqm. Avoid anything over 80 cm in standard bedrooms, the fixture will dominate the room.

Won't it be too bright when I need to sleep?

No, if you use dimmable bulbs (most VC chandeliers accept them) you can scale brightness down to nightlight levels. Choose warm 2700K bulbs, avoid anything 4000K or cooler in bedrooms. A TRIAC wall dimmer or smart bulbs let you change brightness on a schedule.

Above the bed or in the room center, what's better?

Center on the bed footprint (the area covered by the bed itself), not directly above the pillows. This avoids the heavy overhead feeling at night and gives more even light distribution. The room geometric center only works if your bed is centered on the room.
